I LOVE making Chili and especially white chicken chili. So, that’s what I did over Thanksgiving break. It made so much that I ended up feeding my neighbors too. They asked for the recipe, so here it is! Yum!!!

Low Fat White Chicken Chili Recipe

(adapted from a Food.com recipe)

3 cloves garlic

1 tablespoon olive oil

2 lbs. cubed boneless skinless chicken

1 medium onion, chopped

2, 15 ounce cans of great northern beans, drained

16 ounces fat free chicken broth

1 ½ poblano peppers, diced

4 ounces (about 2) jalapeno peppers, diced

1 teaspoon salt

1 teaspoon oregano

1 teaspoon cumin

½ teaspoon cayenne pepper

½ teaspoon black pepper

1 cup sour cream

1/3 cup low fat milk


  1. Saute the first 4 ingredients together
  2. Add beans, broth, peppers, and all of the spices. Simmer for 30 minutes.
  3. Add the sour cream and milk. Stir frequently until hot.
  4. Serve with water crackers or saltines.

    How spicy does this come out? I love white chicken chili but am a wimp about too much heat! 🙂

      Hmmmm. On a scale of 1 to 10, it’s probably a 6 or 7. You could substitute the jalapeno peppers for more poblano or even green peppers. The poblano ones have no heat, but a good flavor, but it might be nice to have another pepper variety in there too!
