1 large pancake, about 6 inches diameter, along with all of the ingredients used to make it: Justin's Peanut Butter, Kodiak Power Cakes pancake mix, organic cinnamon, Mariani sliced almonds, Cary's sugar-free syrup

Pancake batter: 1/2 cup Kodiak Power Cakes, 1/2 cup water, 1 Tbsp almonds, dash of cinnamon. On top: 1 tsp peanut butter, 1/4 cup sugar free syrup

I have a weakness for anything breakfast, and especially anything in the french toast or doughy pancake realm. So I was intrigued to find Kodiak Power Cakes Protein Packed Flapjack & Waffle Mix at Costco and decided to give it a try.

I’ve tried other protein pancake mixes, such as MET-Rx High Protein Pancake Mix and haven’t been impressed. But I lived in hope.

And thankfully, I wasn’t disappointed. These pancakes are great!

And while they don’t keep me as full as my usual breakfast of fruit, oatmeal, and almonds, they are a great not-so-unhealthy “treat” once in a while for breakfast.

Hints:

  • I like really doughy pancakes, so I use a small omelet pan and make one big pancake (see photo) vs. small ones. I also found just using water vs. the other suggestions of eggs or milk makes the pancake center more like dough.
  • Adding cinnamon to the mix gives a great flavor punch without adding calories or carbohydrates.

Pancake batter

1/2 cup Kodiak Power Cakes

1/2 cup water

1 Tbsp almonds

dash of cinnamon

On top

1 tsp peanut butter

1/4 cup sugar free syrup

My most recent go-to evening snack is my homemade fruit & nut yogurt parfait. It only takes a minute to make and I really look forward to it at the end of the day. AND, it keeps me full and my blood sugar even, so no hypoglycemic attacks, all night.

Why not just buy yogurt with the fruit in the bottom? Well, most of those include more added sugars. For example, take this Chobani Fruit On the Bottom Cherry Greek Yogurt. It has 17 grams of sugar (see “Evaporated Cane Juice” in the ingredients)! My version below only has 10 grams of sugar and tastes very fresh.

Ingredients:

  • 3/4 cup Fage 0% Greek Yogurt (I make this in a coffee cup to keep me accurate)
  • 5 frozen cherries, thawed in the microwave (so slightly warm and with cherry juice)
  • 1 Tbsp shaved almonds
  • Organic cinnamon

I found this Met-Rx High Protein Pancake Mix at my local grocery store and, despite the high cost ($20!), I decided to give it a try with my much-loved Cary’s Sugar Free Syrup.

Positives:

  • Yay!!! Pancakes! I love pancakes and french toast.
  • 3 scoops (300 calories) and 3/4 cup of milk with espresso keeps me full for 3-4 hours and my blood sugar even.
  • They cook-up fast and nice and fluffy  with a slight crunch on the outside (note: the batter is really thick compared to normal batter).

Negatives:

  • The high cost.
  • I don’t want to say they lack flavor, but let’s just say it’s very, very subtle. I add cinnamon and a touch of vanilla to try to help this, but it doesn’t do much. If you’re looking for a wonderful buttermilk flavor, you’ll be disappointed.

Overall:

I’m not going to make this an everyday habit as I think more natural foods are better (eggs, nuts, fruit, etc.), but this is a nice treat every once in a while and especially when I need to be full for a long time.

Turkey Tacos for Thanksgiving

 

Never one for convention, I decided to make a Tex-Mex Thanksgiving dinner for my boyfriend and I.  I got this recipe from a comment on Lifehacker’s What’s Your Go To Date Recipe and made one modification. They taste so good and they are very hypoglycemic-friendly (high protein, low carb).

Serves 3

Ingredients:

  • 2 packages of Sauzon (not included in the nutrition info, it wasn’t an option on the calculator).
  • 1 lb package of 97% lean turkey
  • 9 corn (not blended, fully corn) tortillas
  • 3/4 cup Mexican-style shredded cheese
  • 1 red onion, chopped (I only use a small portion on each)
  • 1 5.3 oz cup of Fage Greek Yogurt plain (this is a healthy sour cream substitute)
  • Fresh cilantro
  • Wing sauce

Directions:

  • Toast the corn tortillas on both sides
  • Cook the turkey, add both packets of Sauzon about half way through, cook until brown
  • Sprinkle some of the cheese on the tortillas
  • Add on the turkey
  • Sprinkle on a bit more cheese
  • From original directions: If you need to keep this warm, place in oven on lowest setting until ready to serve
  • Top with 1 Tbsp of Greek Yogurt, some red onion, and however much cilantro you want on each taco
  • Drizzle hot sauce on top
  • Enjoy the deliciousness

My work wellness coach believes very heavily in the coaching part of her job, which means she doesn’t want to give you advice, just “coach” you and motivate you to come up with your own solutions. The following is a general idea (this is meant to be humorous) of what went down during our call.

Her: What’s your goal for our coaching sessions?

Me: I need help adjusting my food to higher-protein, lower-carb options, while still getting a lot of vegetables in. I especially need help with finding high protein snacks for on-the-go. I’m bored with my current set of snacks.

Her: Ok, how could you find help?

Me: I can call you and ask you.

Her: How ELSE could you find help? What could you do on your own?

Me: Calling you, an expert is helping myself.

Her: What could you do OTHER than call me?

Me: I know what you want me to say, you want me to come up with ways to research this on my own and I get it, “help people help themselves.” But the reality is, I’m a highly motivated person and I’ve already done everything else. I’ve read diabetic magazines, searched the web for recipes, gotten on bodybuilder forums thinking they’d have a lot of ideas, interviewed friends, and more. Logically speaking, considering my efforts thus far haven’t been very successful, the next most logical actionable step is to seek the help of someone more educated than I, which is you. So, while I appreciate what you are trying to do the best way for me to help myself at this point is to seek answers directly from you, my wellness coach.

Her: (exasperated, mumbled off a few names of some recipe books, told me to eat more beans and said we’d check back with each other in a couple of weeks…which didn’t happen).

Ah well, back to the drawing board :-). To be fair, I’ve had other wellness coaches that helped me immensely and her approach is correct for a majority of folks, just not me.

I’ve been on my new high protein, less carb diet for a while now and one day I couldn’t take it anymore…I wanted something sweet. So I scarfed down two “fun size” candy bars I found. Within 30 minutes I was very hyper and turned into a total B*tch (yes, the capital B is on purpose). I actually cut short a meeting with a guy that works for me because I recognized it right away (I guess that’s a positive?). The rest of the day I felt like crap. I’m simply not used to sugar anymore.

Lesson learned
